National Chocolate Chip Cookie Day

In celebration of National Chocolate Chip Cookie Day, we teamed up with one Ocala local who’s cookie-making skills are simply legendary.  Lisa Seiffer, Sr. Manager, Financial Planning & Analysis at Signature Brands has been making this recipe since college and they are always a hit.

Lisa says, “I love chocolate chip cookies in general, but adding peanut butter makes these just that much better. My friend and I co-host an annual Christmas cookie exchange party and this will be our 8th year. In addition to baking, I’m passionate about the arts in our community and am Board Chair of Marion Cultural Alliance this year.”

Peanut Butter Chocolate Chip Cookies

  • 1 c. butter, softened
  • 1 c. granulated sugar
  • 1 c. brown sugar, firmly packed
  • 1 c. creamy peanut butter
  • 2 eggs
  • 1 t. vanilla
  • 2 ½ c. all-purpose flour
  • 1 t. baking powder
  • 1 t. baking soda
  • ½ t. salt
  • 2 c. semisweet chocolate chips

Preheat oven to 375 degrees.
Cream butter, sugars and peanut butter until light. Add the eggs and vanilla and mix until fluffy.

Blend the flour, baking powder, soda and salt together well.  Add these dry ingredients to the butter mixture.  Mix until combined. Stir in the chocolate chips.

Drop by tablespoonfuls or #40 cookie scoop. Bake for 10-12 minutes. Cool on wire racks.

Makes 4-5 dozen
