Enjoy a spectacular evening of food, spirits, and friends. During this popular annual event, guests will have the opportunity to sample menu items from a variety of the area’s notable restaurants. Maybe your favorites will be there, or maybe you’ll experience some new and exciting tastes! This year’s festivities will be held at the Historic Lakeside Inn on Sunday, May 3. Make sure you get your ticket. As a proud supporter and sponsor of this annual event, Lake & Sumter Style wanted to share some delicious recipes from five of the participating restaurants. Enjoy!

Crab Cakes

Makes 4-5 five-oz. crab cakes
1 lb. jumbo lump crabmeat
2 oz. diced sweet onion
2 oz. diced green pepper
2 oz. diced red pepper
3 oz. roasted fresh corn
1 egg
1/2 c. mayonnaise
1 whole egg
1 c. Japanese bread crumbs
2 oz. olive oil
1/8 tsp. cayenne pepper
1/8 tsp. dry mustard
Juice of 1/2 lemon
Sauté onion and green and red peppers in olive oil. Cook. Flake crabmeat, then mix in onion, pepper, corn, mustard, and cayenne pepper. Add mayonnaise, egg, and lemon juice and mix well. Add bread crumbs until mixture holds together. Refrigerate overnight, then shape into cakes and coat with Japanese bread crumbs. Sauté in olive oil until brown and finish in oven.
Sauce:
2 oz. Béchamel (1 oz. butter and 1 oz. flour cooked together; then add 3 oz. milk, salt, and pepper)
2 oz. white wine
2 oz. whole grain mustard
Mix wine and mustard together. Cook until thickened, then add Béchamel.

Dressing:
1/2 c. sweet Thai chili sauce
1/4 c. canola (or vegetable) oil
1/4 c. rice wine vinegar
1/4 c. fresh squeezed orange juice
Salad:
Toasted and salted pistachios
Oven-roasted fresh apricots
Grilled red onions
Gorgonzola cheese crumbles
Serve on fresh, chopped romaine hearts.

Oriental Chicken Salad

6 oz. of chicken breast (marinate in golden Italian dressing for 4 hours)
3 oz. of baby greens (or any lettuce of choice)
1/4 c. chopped walnuts
1/3 c. chow mein noodles
1/2 c. mandarin oranges
1 Tbs. Oriental sesame dressing
1 Tbs. honey ginger dressing
Cook chicken on the grill. Combine salad ingredients, top with grilled chicken, and serve.

Chicken Cardinale

Serves 4
2 chicken breasts
1/4 lb. mushrooms
1/4 c. sherry wine
3 Tbs. butter
10 oz. heavy cream
12 oz. marinara sauce
Melt butter in sauté pan. Add chicken and mushrooms until chicken is light brown. Add sherry wine, cook to reduce. Add heavy cream, and cook until thickened. Add marinara sauce, cook 2-3 minutes stirring thoroughly. Serve with grilled vegetables recipe below.

Roasted red pepper
Zucchini
Eggplant
Grill vegetables. Drizzle with olive oil, garlic, and mint.

Award-Winning Apple Strudel

7 c. assorted cooked apples, including Granny Smith, Roma, Red Delicious, and Golden Delicious
3 oz. cinnamon
3 oz. crystallized sugar
10”x15” puff pastry
Dock pastry and dust with cinnamon. Place apples in the center and fold edges over. Flip pastry seams on bottom. Cut seven equal holes along top for portioning. Spray pastry with water and dust with sugar. Bake for 25 minutes in 395-degree oven. Serve with apricot glaze or crème auglaize and vanilla bean ice cream.
